Just a tad north of the heart of Spain, you will find a quaint little town, Segovia. As you enter you will be greeted by the Romans, or at least by what they left behind, an immense aqueduct dating back to the 1st century. You come for the aqueduct but you stay to experience a world famous suckling pig, so tender the chef comes out and parts it with a plate, celebrating the procession by sliding the unconventional ‘knife’ onto the floor, making a celebratory sound and starting the delicious lunch. A true delicacy and one of a kind experience.
